I have always been a fan of ricotta pie, until I tasted this recipe and then I became obsessed with it. A neighbor shared a slice of this pie with me years ago and I've made it every year for Easter since. I love the taste of the citrus in it!
RICOTTA PIE
3 Cups Ricotta Cheese (or 1 ½ lbs.)
¼ Cup Flour
1 Cup Sugar
4 Eggs
2 Tablespoons Orange Rind
2 Tablespoons Lemon Rind
1 Tablespoon Vanilla
1/8 Teaspoon Salt
2 Deep Dish Pie Crusts
Directions:
Beat ricotta cheese, eggs, sugar, flour, vanilla, salt, orange and lemon rind with a mixer.
Pour cheese mixture into a store-bought deep dish pie crust
Sprinkle cinnamon on top.
Bake at 350 degrees for 50 to 60 minutes.
