Chocolate Mint Brownies

I’ve made these brownies so many times and they are absolutely AMAZING but sometimes I cheat and use Betty Crocker Hershey’s Triple Chocolate Brownie mix if I'm pressed for time. Either way, they are out of this world!


CHOCOLATE MINT BROWNIES


Brownies

  • ½ cup butter

  • 2 squares (1 ounce each) unsweetened chocolate

  • 2 eggs

  • 1 cup packed light brown sugar

  • ½ cup all-purpose flour

  • 1 teaspoon vanilla

Preheat oven to 350°F. Grease and flour an 8-inch square pan. Melt butter and chocolate in small heavy saucepan over low heat; stir to blend. Remove from heat; cool. Beat eggs in medium bowl until light. Add brown sugar, beating well. Blend in chocolate mixture. Stir in flour and vanilla. Spread batter evenly in prepared pan. Bake 30 minutes or until firm in center. Cool in pan on wire rack.

Prepare Mint Frosting (below). Spread over the top; refrigerate until firm.

Mint Frosting

  • 1 ½ cups powdered sugar

  • 4 tablespoons butter, melted

  • 2 tablespoons milk or cream

  • 1 teaspoon peppermint extract

  • 2-3 drops green food coloring

Blend powdered sugar, 2 tablespoons cream and the butter in a small bowl until smooth. Add more milk or cream, if necessary, to make spreading consistency. Blend in peppermint extract and enough green food coloring to make a pale mint-green color.

Prepare Chocolate Glaze (below). Spread over frosting; refrigerate until firm. Cut into 2-inch squares. Makes 16 brownies

Chocolate Glaze

  • ½ cup semisweet chocolate chips

  • 2 tablespoons butter, melted

Place chocolate chips and butter in small bowl over hot water and stir until melted and smooth (or melt in microwave). Place in a small plastic bag and cut a small hole in the corner to pipe on top of the mint frosting.
