Crusty Cream Cheese Pound Cake

If we worked together 25 years ago, chances are we all had this cake made for us by the same person on our birthday (and we all looked forward to it every year)!


CRUSTY CREAM CHEESE POUND CAKE

1 cup butter or margarine softened

½ cup shortening

3 cups sugar

1 (8 oz.) package cream cheese

3 cups sifted cake flour

6 eggs

1 tablespoon vanilla extract


Directions:

  1. Cream butter and shortening; gradually add sugar, beating well at medium speed of an electric mixer.

  2. Add cream cheese, beating until light and fluffy. Alternately add flour and eggs, beginning and ending with flour. Stir in vanilla.

  3. Pour batter into a greased and floured 10-inch tub pan. Bake at 325 degrees F for 1 hour and 15 minutes or until a wooden pick inserted in center comes out clean.

  4. Cool in pan 10 minutes; remove from pan, and let cool completely on a wire rack.

  5. Yield one 10-inch cake.
