Ginger Snap Cookies

I love making these cookies in the fall but they're great any time of year! The house smells amazing when I make them and it always reminds me of a crisp fall night gathered around a bonfire with family and friends.


GINGER SNAP COOKIES

  • ¾ cup butter

  • 1/2 cup brown sugar

  • 1/2 cup white sugar

  • 1 egg

  • ¼ cup molasses

  • 1 tablespoon ground ginger

  • 2 teaspoons baking soda

  • 1 teaspoon cinnamon

  • 2 cups flour

  • ½ teaspoon salt

Directions:

  1. Preheat oven to 350 degrees F.

  2. Cream butter and sugar. Beat in egg and molasses.

  3. Mix dry ingredients together and add to creamed mixture. Form into teaspoon-sized balls by hand or with a cookie scoop and roll in granulated sugar to coat lightly.

  4. Bake about 1 ½ inches apart for 10-12 minutes.

  5. Yield: 75 cookies
