I love making these cookies in the fall but they're great any time of year! The house smells amazing when I make them and it always reminds me of a crisp fall night gathered around a bonfire with family and friends.
GINGER SNAP COOKIES
¾ cup butter
1/2 cup brown sugar
1/2 cup white sugar
1 egg
¼ cup molasses
1 tablespoon ground ginger
2 teaspoons baking soda
1 teaspoon cinnamon
2 cups flour
½ teaspoon salt
Directions:
Preheat oven to 350 degrees F.
Cream butter and sugar. Beat in egg and molasses.
Mix dry ingredients together and add to creamed mixture. Form into teaspoon-sized balls by hand or with a cookie scoop and roll in granulated sugar to coat lightly.
Bake about 1 ½ inches apart for 10-12 minutes.
Yield: 75 cookies
