I make these every year for St. Patty's Day. Time consuming but delicious and cheaper than the bakery!



IRISH POTATOES
Double Batch
1 ½ sticks butter, softened
1 (8 oz.) package cream cheese
3 teaspoons vanilla extract
8 cups confectioners’ sugar
6 cups flaked coconut
2 Tablespoons ground cinnamon
Regular Batch
3/4 cup butter, softened
1/2 package (4 oz.) of cream cheese
1 1/2 teaspoons vanilla extract
4 cups confectioner's sugar
3 cups flaked coconut
1 Tablespoon ground cinnamon
Directions:
In a medium bowl beat the butter and cream cheese together until smooth.
Add the vanilla and confectioners’ sugar; beat until smooth.
Using your hands if necessary, mix in the coconut. Roll into balls or potato shapes and roll in the cinnamon. Place onto a cookie sheet and chill to set. If desired, roll potatoes in cinnamon again for darker color.
The doubled batch makes approximately 100 potatoes.
