Old-Fashioned Oatmeal Raisin Cookies

I've never been a big fan of oatmeal raisin cookies... they've always been just "meh" - bland, soft, mushy... until I tasted these! Trust me when I tell you - these are the absolute best oatmeal raisin cookies you'll ever taste. They're crunchy on the outside and chewy on the inside and packed with raisins and flavor! I'll bet you can't eat just one!


OLD-FASHIONED OATMEAL COOKIES

  • 3 cups quick-cooking oats

  • 2 cups firmly packed brown sugar (light or dark)

  • 1 cup butter, softened (Land 'O Lakes)

  • 2 eggs

  • 1 teaspoon baking soda

  • 1 teaspoon cinnamon

  • 1/2 teaspoon salt

  • 2 teaspoons vanilla extract

  • 1 3/4 cups all-purpose flour

  • 3 cups raisins

Directions:

  1. Heat oven to 375 degrees F.

  2. In a large mixer bowl combine all ingredients except flour and raisins. Beat at low speed, scraping bowl often, until well mixed (1 to 2 minutes).

  3. Add flour; continue beating until well mixed (1 to 2 minutes).

  4. Stir in raisins. Drop dough by rounded teaspoons 2 inches apart onto greased cookie sheets.

  5. Bake 8 to 10 minutes or until edges are lightly browned. 4 dozen. 60 minutes.
