KitKat Pizzelles

When I was little, my cousin used to make pizzelles rolled up with a piece of Hershey chocolate inside and topped with powdered sugar. They were my absolute favorite cookie! When I started making them myself 30 years ago, I wondered what might fit perfectly inside of a rolled pizzelle... hence the KitKat pizzelle!

PIZZELLES (WITH AND WITHOUT KIT KATS INSIDE)

  • 6 eggs

  • 3 1/2 cups flour

  • 1 1/2 cups sugar

  • 2 tablespoons vanilla extract and/or 2 tablespoons anise extract (I use both)

  • 1 cup butter, melted (do not use more or substitute oil)

  • 4 teaspoons baking powder

  • KitKats (if rolling them)

  • Powdered sugar (to sift on top)

Directions:

  1. Beat eggs, adding sugar gradually. Beat until smooth.

  2. Add cooled butter and vanilla or anise.

  3. Sift flour and baking powder. Blend into egg mixture until smooth. Dough will be sticky enough to be dropped by spoon or a small Pampered Chef scoop.

  4. Bake in Pizzelle iron. Make approximately 60 pizzelles.

Variation: Pizzelles with nuts. Finely chop one cup of walnuts or pecans. Blend into Pizzelle Dough. Some people add cocoa for a chocolate pizzelle. You can also add orange or lemon extract and rinds.
