Rosettes

Wow! I cannot believe the attention this little treat has received on my Facebook and TikTok! My boyfriend asked me to make these last Christmas because his mom always made them when he was growing up. The ingredients are simple, but you definitely need the iron.


We bought the iron below from Amazon last year. It is called: Nordic Ware Swedish Rosette and Timbale Set (Makes delicious deep-fried, melt-in-your-mouth Scandinavian cookies and pastry shells. Set includes: 3 Rosette irons, 3 Timbale pastry irons, Recipe & instructions on back).


ROSETTES

  • 2 eggs

  • 2 teaspoons sugar

  • 1 cup milk

  • 1 cup sifted flour

  • 1/4 teaspoon salt

  • 1 Tablespoon lemon extract*

Directions:

  • Slightly beat eggs in a medium bowl. Mix in sugar and milk. Sift flour with salt. Stir into egg mixture and beat until smooth (about consistency of heavy cream). Mix in extract until incorporated. Transfer to a shallow dish. Fry as directed (directions say to heat oil to 325 degrees - I use canola oil but you can use vegetable if that's what you prefer). When Rosettes are cool, sprinkle with powdered sugar and serve. Makes approximately 4 dozen Rosettes.

  • The trick is to keep the iron in the hot oil between cookies and dab on a paper towel before dipping into the batter. Once you get the hang of it, it's easy!

* You may replace lemon extract with vanilla, brandy, anise or rum extract.

- For crispier Rosette Cookies cover and refrigerate batter for at least 24 hours before using.
