Walnut Balls

Yummy, melt-in-your-mouth walnut balls! These cookies are similar to snowball cookies, Mexican wedding cakes, etc. except I added egg, almond and vanilla extracts and gave it my own twist 30 years ago and they quickly became a family favorite. I personally love anything covered in powdered sugar but these are especially tasty because of the almond extract - it gives them an extra pop of flavor!


WALNUT BALLS

  • 1 lb. Land 'O Lakes butter

  • 2 Eggs

  • 4 cups chopped walnuts

  • 4 cups flour

  • ½ cup plus 2 Tablespoons sugar

  • 4 teaspoons vanilla extract

  • 4 teaspoons almond extract

  • 2 tablespoons water

  • 1 teaspoon salt

  • 1 box confectioners’ sugar (to roll cookies in)


Directions:

  1. Beat butter, eggs, sugar, salt, vanilla, almond extract and water until light & fluffy. Add nuts and flour one cup at a time.

  2. By hand, roll and shape into 1-inch balls (I use a small cookie scoop).

  3. Bake at 325 degrees F for approximately 15 minutes.

  4. While still warm, carefully roll in confectioner’s sugar.

  5. Let cool completely and repeat a second time.
