Candied Yams or Sweet Potatoes

Nothing fancy, just super-yummy!



CANDIED YAMS OR SWEET POTATOES

  • 6 yams or sweet potatoes

  • 2 cups brown sugar (dark or light)

  • 1 stick of butter

  • 1 tsp. vanilla


Directions:

  1. Peel yams and boil until tender.

  2. Remove from water and let cool for about 30 minutes.

  3. Slice into 2" cubes and place in a pan sprayed with Pam (or use disposable aluminum trays for easy cleanup).

  4. Melt 1 stick of butter with 2 cups of brown sugar and boil for at least 5 minutes on medium heat (it will be bubbly, stir often so the bottom doesn't burn).

  5. Pour butter and brown sugar mixture evenly over the yams and bake in 350 degree F oven bake for approximately 45 minutes.

  6. Let cool for at least 15 minutes so the butter and brown sugar thickens slightly.
