When I worked in the city many years ago, the cafeteria used to make these delicious biscuits every day and eventually they published a cookbook for employees to purchase and this recipe was included. I have made these many times over the years and they are so tasty!
EATING WELL'S CINNAMON RAISIN BISCUITS
4 Cups Flour
4 tsp. Baking Powder
3 Tablespoons Sugar
1 Teaspoon cinnamon
½ teaspoon salt
4 Tablespoons Apple Butter
1 ½ Cups Skim Milk, plus 2 Tablespoons
1 Cup Powdered Sugar
2 /3 Cup Canola Oil
1 Cup Raisins
Directions:
Combine flour, baking powder, sugar, cinnamon and salt in bowl.
Blend in oil until mixture is crumbly. Add raisins and toss well.
Add milk and apple butter and stir just until dry ingredients are moistened.
Turn dough onto floured surface and knead 4 to 5 times. Roll into ball and divide into 16 pieces. Form each piece into a log shape and bake 450 degrees about 11 minutes or until golden brown.
Combine powdered sugar and 1 Tablespoon of skim milk and mix well. Drizzle over biscuits.
Serves 16. Per Biscuit: 188 calories, 2.2 gm. Fat (10%) < 1 mg. cholesterol, 1 gm. Fiber.
