Fried Jersey tomatoes with pesto all summer long!
FRIED TOMATOES WITH PESTO
Ripe tomatoes (thankfully we live in NJ - home of the best tomatoes)
Italian breadcrumbs
2-3 Eggs
Canola or vegetable oil
Homemade pesto
Directions:
Rinse and slice tomatoes.
Beat eggs and dip tomato in egg and then breadcrumbs.
Fry in canola or vegetable oil until golden brown.
Place on paper towel to drain oil.
Serve with homemade pesto (or add a slice of mozzarella and then top with pesto).
