This is one of the most delicious Jewish Apple cake's I've ever tasted!
JEWISH APPLE CAKE
3 cups flour
2 cups sugar
½ cup pineapple juice
2 ½ tsp. vanilla
½ tsp. salt
3 tsp. baking powder
1 cup vegetable oil
4 eggs
3 large apples or 4 small (Granny Smith)
Directions:
Preheat oven to 325 degrees F.
Peel apples and cut into eighths. Make a cinnamon-sugar mixture and sprinkle all over apple slices to coat. Set aside.
Mix all of the other ingredients together in a large bowl and blend (batter will be thick.)
Grease and flour a 10-inch tube pan (or bundt pan).
Layer some batter (about 1/3) on the bottom, and then top with a layer of apples. Repeat layers until all batter & apples are gone.
Bake at 325 degrees F for 1 hour and 15 minutes. Cool in pan on wire rack. If necessary, loosen sides with knife before inverting onto wire rack.
This cake is best if you do not cover it for a while… a great outer crust will form!
