Mom's Broccoli Rabe

My mom makes the best broccoli rabe! I never made it before but she's so good at it, I'll just keep letting her make it!


BROCCOLI RABE

  • 4 heads of broccoli rabe

  • 6-7 cloves of garlic, minced

  • Hot Pepper Flakes

  • 1/2 Cup Extra Virgin Olive Oil

  • Salt & Pepper


Directions:

  1. Cut off large stems from broccoli rabe.

  2. Rinse and place into a large pot of water and bring to a boil for approximately 12-15 minutes until soft.

  3. Use colander to drain, run cold water and add ice (let sit for about 30 min. to cool).

  4. Squeeze water from broccoli rabe and chop on cutting board.

  5. Place on sheet pan and drizzle 1/2 Cup of Extra Virgin Olive Oil over broccoli rabe and ensure that everything is coated.

  6. Add salt, pepper and hot pepper flakes (to taste).

  7. Add minced garlic and lightly toss to ensure everything is coated with oil.

  8. Bake on 425 degrees F for 20 minutes.

  9. Before storing in refrigerator, drizzle with oil to keep fresh.

  10. Serve at room temperature or microwave for a few seconds before serving and enjoy!
