Mom's Sausage Stuffing

It's not Thanksgiving unless Mom makes her sausage stuffing.


MOM'S SAUSAGE STUFFING

  • 1 stick of butter

  • 1 red onion, diced

  • 1 bag of celery, cleaned and chopped

  • Sweet sausage (take out of casing and fry in separate pan)

  • Fat-free chicken stock (to moisten breadcrumbs)

  • 2 bags seasoned breadcrumbs

  • 2 bags plain breadcrumbs

  • 4 eggs

  • Fresh parsley

  • Salt & pepper

Directions:

  1. Melt 1 stick of butter and add diced red onion. Cook until onions are translucent.

  2. Remove casing from sausage and fry in a separate pan.

  3. Pour butter & onions over the breadcrumbs in a large mixing bowl, add sausage, chicken stock (enough to moisten all of the breadcrumbs) and 4 eggs, parsley, salt & pepper (to taste) and mix well.

  4. Pour into a baking dish or a disposable aluminum tray and bake in 350 degree F oven for about 45 minutes or until top is golden brown.
