It's not Thanksgiving unless Mom makes her sausage stuffing.
MOM'S SAUSAGE STUFFING
1 stick of butter
1 red onion, diced
1 bag of celery, cleaned and chopped
Sweet sausage (take out of casing and fry in separate pan)
Fat-free chicken stock (to moisten breadcrumbs)
2 bags seasoned breadcrumbs
2 bags plain breadcrumbs
4 eggs
Fresh parsley
Salt & pepper
Directions:
Melt 1 stick of butter and add diced red onion. Cook until onions are translucent.
Remove casing from sausage and fry in a separate pan.
Pour butter & onions over the breadcrumbs in a large mixing bowl, add sausage, chicken stock (enough to moisten all of the breadcrumbs) and 4 eggs, parsley, salt & pepper (to taste) and mix well.
Pour into a baking dish or a disposable aluminum tray and bake in 350 degree F oven for about 45 minutes or until top is golden brown.
