Chicken Parm Roll-Ups

Well this recipe was a hit with my family! I saw it on TikTok (credit to Kathyquad123 https://www.tiktok.com/t/ZTLMGfUgb/). It was super- easy and delicious!


CHICKEN PARM ROLL-UPS


INGREDIENTS:

  • Marinara (Homemade or your favorite brand - I like Rao's)

  • Red Wine (optional) - I used Pino Noir

  • Chicken Broth

  • Thin-sliced Chicken Breasts

  • Extra-Virgin Olive Oil (EVOO)

  • Italian-Style Breadcrumbs

  • Panko Breadcrumbs

  • Sliced Mozzarella

  • Butter


Directions:

  1. Preheat oven to 375 degrees F.

  2. Pour a jar of marinara into the bottom of an oven-safe baking dish.

  3. Add a bit of red wine and chicken broth to the marinara and mix together.

  4. Dip thin chicken slices in EVOO and then in the Panko/Italian-style breadcrumbs.

  5. Roll a slice of mozzarella inside and add roll-ups to the baking dish.

  6. Top each piece of chicken with a little extra breadcrumbs.

  7. Grate butter on top of the chicken (I just added small cubes of butter to each breast).

  8. Note: Do not cover chicken in marinara. You want the breadcrumbs on top to get all brown and buttery.

  9. Cover with foil and bake on 375 degrees F for 45 minutes.

  10. Remove foil and bake for another 15-20 minutes until breadcrumbs are golden brown.

  11. Serve with your favorite pasta and enjoy!
