Grilled chicken sandwiches with roasted red peppers, fresh mozzarella, grilled eggplant and homemade pesto on a grilled ciabatta roll.
GRILLED CHICKEN SANDWICHES
Boneless, skinless chicken breasts
Roasted red peppers (in water)
Eggplant
Fresh mozzarella (pre-sliced works great!)

Ciabatta rolls
Directions:
Slice chicken breasts in half (or use thin sliced chicken breasts).
Brush chicken breasts with olive oil and season both sides with salt and pepper.
Remove skin from eggplant and slice medium round slices. Brush both sides with olive oil and season with salt & pepper.
Slice ciabatta bread in half and brush the inside of each half with olive oil and season with salt & pepper.
Grill chicken, eggplant and ciabatta bread (both sides).
Spread a generous amount of pesto on both sides of the toasted ciabatta bread, add chicken, sliced mozzarella cheese, roasted red peppers and grilled eggplant. Slice sandwiches diagonally and serve!
