My Mom's recipe is a bit different than my creamy shrimp scampi but equally as delicious!
MOM'S SHRIMP SCAMPI
1/2 cup extra virgin olive oil
1 stick of butter
4 cloves of fresh garlic (chopped)
Parsley (fresh or dried) to taste
2 lbs. of fresh or frozen large shrimp, thawed
Chicken broth
1 lb. of pasta (whatever kind you like)
Salt, pepper and garlic powder (to taste)
Directions:
Cover bottom of a large fry pan with the oil, butter and chopped garlic.
Cook on low until fragrant (careful not to let the garlic burn), add shrimp and other ingredients to the pan and keep turning the shrimp (they cook fast).
Add chicken broth as needed for additional juice.
When the shrimp turns orange they are done. Just simmer a little, don’t over cook the shrimp or they get rubbery.
In a separate pot, cook the pasta, then strain put into a pasta dish and pour the pan of shrimp and juices over the pasta.
