My Grandmom used to make this when I was little and now my mom, daughter and I make it.
MOM'S SPANISH CHICKEN & RICE
Purdue Chicken Tenders
3 Red Peppers (optional)
1 Large Red Onion
Can of Chunk Tomato w/Basil (DelMonte)
White Rice (Uncle Ben’s Regular) – 8 Servings
2 Pkgs. Saffron
Olive Oil, Salt, Pepper and Parsley
Directions:
Sautee chicken tenders in oil and set aside.
Sautee peppers and onions in oil.
Pour in rice and water (8 servings).
Add Saffron and tomato.
Add chicken tenders back in.
Add salt, pepper and parsley.
Cover with lid and cook until all liquid is gone, stirring frequently.
