My mom and I make sausage scallopini slightly different so I wanted to include both recipes below. One is made in the crockpot and the other is made on the stove in a large skillet, slightly different ingredients but both equally delicious!
MOM'S SAUSAGE SCALLOPINI
Ingredients:
3 lbs. sausage (hot or sweet or a combination of both, just preference)
3 large green bell peppers
2 large purple onions
2 containers of sliced mushrooms
2 cans of Tuttorosso crushed tomatoes
1 can of San Marzano tomatoes
Directions:
Cook sausage in the oven on 350 degrees F for about 25 minutes on each side. Remove from oven and set aside to cool. After sausage has cooled, cut into bite size pieces and place in crockpot.
Slice peppers and onions and add to crockpot. Add tomatoes, sliced mushrooms, salt, pepper, parsley and garlic powder. Reduce heat to low and cook for 8 hours.
Serve on a toasted Italian roll as a sandwich or over a bed of pasta or rice, top with Locatelli or grated parmesan cheese.
TRACY'S SAUSAGE SCALLOPINI
Ingredients:
3 lbs. sausage (hot or sweet or a combination of both, just preference)
3 large bell peppers (any color)
1 large purple onion
2 containers of sliced mushrooms
1-2 jars (24 oz.) marinara sauce
2 cloves garlic (minced)
2 tablespoons EVOO
Locatelli or grated parmesan cheese (optional)
Fresh basil or parsley (optional)
Directions:
Prepare the Sausage: Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the sausages and cook until browned on all sides. Once browned, remove the sausages from the skillet and set them aside.
Cook the Vegetables: In the same skillet, add the remaining tablespoon of olive oil. Add the sliced onions and bell peppers. Sauté until the vegetables are tender, about 5-7 minutes. Add the minced garlic and cook for an additional 1-2 minutes.
Combine Ingredients: Return the sausages to the skillet with the vegetables. Pour in the marinara sauce, stirring to combine. Season with salt and pepper to taste.
Simmer: Reduce the heat to low, cover the skillet, and let the mixture simmer for 20-25 minutes, or until the sausages are fully cooked and the flavors have melded together.
Serve: Serve the sausage scallopini hot, either on a toasted roll as a sandwich or over a bed of rice or pasta. Garnish with fresh basil or parsley if desired.
