Pasta and Peas

Another one of Mom's delicious recipes. I should have called my page Mooch-a-Meal with Mom ... and Tracy! LOL


PASTA AND PEAS

  • Olive oil

  • 1 red onion

  • 4 cloves of garlic

  • 2 cans of peas

  • Fat-free, no MSG chicken broth

  • Salt and pepper

  • 1-2 tbsp. parsley (dried or fresh)

  • 1 tbsp. basil (dried or fresh)

  • 1 lb. of small pasta shells or Barilla Pippette, Spaghetti, Angel Hair (whatever your preference)

Directions:

  1. In a large Dutch oven pot cover the bottom with olive oil. Add sliced red onion and cook until soft and then add in garlic and cook for a few minutes on medium heat.

  2. Next add 2 cans of peas with juice, salt and pepper, parsley, basil and chicken broth and let is simmer for about 15 minutes.

  3. In a separate pot, cook pasta according to instructions on box, strain and add the pasta to the dutch oven.

  4. Add additional chicken broth depending on how thick or thin you like it.
